Freezing Summer Peaches
Boil a large pot of water. Dip ripe peaches a batch at a time into boiling water for 1-3 minutes. Peel the skins off by hand, taking care to reserve the juices. Split or slice peaches and pack with all the juice into vacuum sealed bags. Freeze in a single layer.
Freezing Summer Corn
Blanch corn for 3-4 minutes. Immediately remove from boiling water, chill for 15 seconds under cold running water and then move to ice water to shock cool quickly. Cut kernels from cob, seal in vacuum bags and freeze in a single layer. Whole blanched corn on the cob can be double wrapped in plastic and frozen.
Freezing Summer Berries
In a saucepan, mix equal amounts of sugar and water. Stir over medium heat until sugar is dissolved and mixture is clear, cool completely. Place clean berries into freezer bags, add just enough syrup to completely cover the berries, burp, seal and freeze in a single layer.
Freezing Green Chiles
Buy fire roasted green chiles or roast your own - instructions follow. Pack airtight in vacuum bags, Ziploc bags or plastic tubs and freeze in a single layer.
To roast: cook chiles over a direct hot fire, turning regularly, to blacken all over. Once they begin to blacken, mist with water occasionally to further loosen skin. Cool in plastic or paper bags and freeze as above.
