Ultimate French Dip Print Email

1 large onion, sliced
1 TBS butter
1 loaf French baguette - plain or sourdough
Dijonnaise spread, to taste - or Mayonnaise or mustard
4 oz sliced Swiss or Gruyere cheese
2 cup prepared Au Jus*
1 pound thinly sliced beef - Tony’s Butcher’s Heart Roast or deli roast beef.

Peel and slice onion. Slowly saute with butter in a heavy 12 inch skillet until tender and brown (cover and use even lower heat if browning is not desired), stirring regularly.

Split bread and toast under broiler, if desired. Spread with Dijonnaise, top with onion and sliced cheese and place back under broiler to melt the cheese.

Heat Au Jus to a boil in a sauce pan. Dip and swish roast beef in simmering Au Jus just long enough to heat through, transfer to prepared bread and serve immediately with remaining Au Jus dip. – Chef Mick
