Mashed Carrots with Honey and Chili Powder Print Email


1.5 lbs carrots
1 TBS butter
2 tsp honey
½ tsp chili powder
fleur de sel or coarse salt and freshly ground pepper

Set a steamer basket in a saucepan with 2 inches simmering water. Add 1 1/2 pounds carrots, halved lengthwise if large and cut into 1-inch pieces; cover and steam until very tender, about 25 minutes. Transfer to a medium bowl and mash with a fork or potato masher. Stir in 1 tablespoon butter, 2 teaspoons honey and 1/2 teaspoon chili powder; season with course salt and ground pepper. Serves 4.
