Halibut / Salmon Salad Sandwich Print Email

1 lb leftover halibut or salmon
1/2 cup mayo and/or yogurt
3/4 cup finely chopped celery
1-2 chopped scallions
3 sprigs fresh dill, chopped
pinch cayenne
1/2 tsp citrus zest
salt and pepper to taste

In a medium bowl, mix together mayonnaise, celery, scallions, dill, cayenne and zest. Flake fish into large pieces and gently fold into dressing, taste and adjust seasoning.

Just before serving, lightly spread salad on toasted sourdough, complementing with sprouts and diced tomato.
