Late Harvest Riesling Salmon Salad Print Email

½ Cup Cuisine Perel Late Harvest Riesling Vinegar
2 TBS Olive Oil
8 Oz. cooked or smoked Salmon, cooked and flaked
2 TBS Capers
¼ Cup English Cucumber, diced
¼ Cup Sweet Corn Kernels
Fresh greens

In small mixing bowl whisk together vinegar and oil. In another bowl gently combine all other ingredients and place over mixed greens. Add dressing directly before serving. Serve with a fresh roll and with your favorite cheese. Serves 2-4 as a salad course or main dish.
