M&M Tomato Shrimp Print Email

1/2 cup onion, chopped
2 cloves garlic, minced
2 tablespoons olive oil
1/2 cup sherry
1 lb shrimp, peeled & deveined
2/3 - 1 jar of MM Local Tomatoes w/ Basil or Tomatoes w/ Rosemary, roughly chopped
chopped parsley
freshly cracked pepper
cous cous

Saute 1/2 cup chopped onion and 2 chopped garlic cloves in 2 tablespoon olive oil until tender. Add sherry, tomatoes (roughly chopped) and shrimp, simmering for several minutes until shrimp is cooked through. Season to taste with freshly cracked black pepper. Plate and garnish with parsley and a drizzle of olive oil (optional).

Serve over couscous. Serves 4.
