Chicken Wings With A Spicy Cherry Glaze Print Email

8 chicken wings, halved at the joint
1 clove garlic, minced
1/2 red pepper, or chipotle in adobo, minced
The juice of half a lemon
2 tablespoon Bonne Maman Cherry Preserves
4 mint leaves, minced
1 teaspoon honey
1 lime, wedged
Salt and pepper

Sprinkle the chicken wings well with salt and pepper

Bake until golden brown in an oven preheated to 400 degrees, approximately 20 minutes.

Meanwhile, mix all the ingredients for the cherry glaze. Set some of the mint aside as a garnish. When the chicken wings are done, cover them with the glaze while still warm. Place in a serving bowl, sprinkle with mint and serve immediately with a wedge of lime.
