Split butternut squashes in half and scoop out the seeds. Peel skin and thinly slice butternut squash into fingers.
Lay a sheet of parchment on a large cookie sheet and mist or brush with oil. Lay butternut fingers on sheet and spray with oil. Sprinkle with cinnamon, Cajun seasoning and turbinado sugar. Roast in the top of a 400-degree oven until squash is soft and sizzling, about 10 minutes.
