Simple Pasta and Veggies Parmesan Print Email

A simple Italian side dish that’s great with Tony’s Italian Meatloaf, Pork Italiano, Italian Sausage and Meatballs. Make it even easier with the variation for Pasta and Veggies w/ Vodka Sauce.

˝ pound spaghettini, capellini or whole-wheat spaghetti
1 large package Tony’s Squash Stir-fry
3 TBS oil
2 cloves garlic, sliced (or more to taste)
1 cup grated Parmigiano Reggiano, or to taste
pinches of salt, pepper and crushed red pepper flakes
2 TBS butter, or to taste
12 basil leaves (approx), thinly sliced

Boil pasta according to package directions. Drain and reserve at least one cup of the pasta boiling water.

Meanwhile, preheat a large skillet over a medium high flame. Add oil and garlic, cooking until fragrant and blonde. Add Tony’s Squash Stir-fry and saute until just tender, about 4-5 minutes.

Add hot pasta, parmesan and pinches of crushed red pepper, tossing to combine. Splash with reserved pasta water to marry and finish with butter. Season to taste with salt and pepper and serve scattered with thinly sliced basil leaves. Serves 4-6.

Variation: Simply saute veggies in oil, add 1 jar of Tony’s Vodka Sauce, bring to a simmer, add pasta and heat through. Serve with parmesan and shredded basil leaves.
