Chicken Breasts with Mushroom Gravy Print Email

A simple one-pan dish you can whip up in minutes - and the whole family is going to love it - made extra easy with Tony’s gravy and mashed potatoes. Also great with steamed brown rice.

4 boneless skinless chicken breasts (or thin pork chops)
Tony’s Roast Poultry & Pork Seasoning
1 TBS olive or canola oil
2 TBS butter
1 pkg Tony’s sliced mushrooms (about 2 cups)
1 jar Tony’s Homestyle Gravy*
4 cups Tony’s Mashed Potatoes - or homemade
- also great with steamed rice or pilaf
one 10oz pkgs Woodstock Farms Organic Mixed Vegetables

Preheat a large skillet over medium high flame. Season chicken breasts (or chops) with Tony’s Roast Poultry & Pork Seasoning. Add oil and meat, browning quickly, about 3-4 minutes per side. Remove meat to a plate and cover.

Refresh pan with butter and add mushrooms, sautéing quickly to soften and brown lightly - about 5 minutes. Add gravy and bring back to a simmer. Add back meats, partially cover and simmer to finish, cooking to 145-155° internal, just a few minutes.

Meanwhile add veggies to ½ cup boiling water, cover, reduce heat and simmer about 5-7 minutes. Warm Tony’s Mashed potatoes in microwave, stirring regularly.

Serve meats and gravy over mashed potatoes or rice with veggies on the side. Excellent paired with a Tony’s Tossed Salad and a rustic baguette. - Serves 4-5 - Chef Mick, --
