Sugar-Spiced Pork Chops with Chipotle Sauce Print Email


Chipotle Sauce
1 cup canned solid pack pumpkin
1 (8 oz) jar salsa
1/4 cup Shredded Parmesan cheese
1 each chipotle chili (optional)
1/2 tsp nutmeg

Pork Chops and Assembly
2 TBS brown sugar
1 tsp cumin
1 tsp chili powder
1/2 tsp salt
1/2 tsp black pepper
4 each boneless pork chops, about 1" thick
1 tsp olive oil
2 plum tomatoes, seeded and chopped
4 tsp cilantro, chopped

For the sauce, combine the pumpkin, salsa, cheese, chipolte chili and nutmeg in a saucepan and mix well. Cook over medium heat for 10 minutes or until the mixture is almost to the boiling point, stirring occasionally. Remove from the heat and cover to keep warm.

For the Pork chops, combine the brown sugar, cumin, chili powder, salt and pepper in a bowl and mix well. Sprinkle the brown sugar mixture over both sides of the pork chops. Heat the olive oil in a skillet over medium heat. Add the pork chops and cook for 10 minutes or until cooked through, turning occasionally; drain. Toss the tomatoes and cilantro in a bowl.

To serve, spoon the sauce onto 4 serving plates. Arrange 1 pork chop on each plate. Top with the tomato mixture. Serves 4
