Cucumber Mango Salad with Peach Vanilla Dressing Print Email

1 seedless cucumber, thinly sliced crosswise
3 ripe mangoes, peeled and diced into 1-inch pieces (3 cups)
1 small red onion, cut in half and sliced into thin strips
¼ cup chopped fresh cilantro
½ cup Braswell’s Peach Vanilla Dressing
2 tsp fresh lemon juice
1 tsp finely chopped jalapeño chile pepper (optional)
Combine all ingredients in medium size bowl. Refrigerate for at least one hour before serving.
