1 tbsp butter
2 cups whipping cream
5 ounces Boursin cheese
3 pounds Red potatoes, thinly sliced
1 tsp salt
1 tsp freshly ground black pepper
Coat the bottom and sides of a 9X13-inch baking dish with the butter. Heat the whipping cream and cheese in a saucepan over medium heat until blended, stirring frequently. Remove from the heat.
Layer the potatoes, salt, pepper and cheese sauce 1 / 2 at a time in the prepared baking dish, arranging the potato slices so they are slightly overlapping. Baked, covered, at 400 degrees for 30 minutes; remove the cover. Bake for 30 minutes longer. Serves 8
