Herbed Tomato Soup Print Email

Amazing combo with a grilled cheese sandwich.

In a large saucepan, heat 1/4 cup butter unto melted. Add 2 medium onions, sliced (about 1 cup) and cook until tender but not browned. Peel, core and chop 6 medium tomatoes (about 4 cups) and add to saucepan. (Or, use one 28 oz can undrained whole peeled tomatoes, cut up.) Stir in one 6 oz can tomato paste; 1 Tbsp. snipped fresh basil; 2 teaspoons snipped fresh thyme; 1 teaspoon salt; and 1/8 tsp pepper. Stir in 4 cups chicken broth and bring to boiling. Reduce heat and simmer for 30-40 minutes. Press through a food mill or puree a little at a time in a blender. Return to saucepan and heat through.
