Matzo Dressing Print Email

8 cups coarsely broken matzos
2 cup cold water
2 large onion chopped
1/2 cup rendered chicken fat, butter or margarine
4 eggs and two egg yolks
2 tsp. salt (or more to taste)
3/4 tsp. pepper
3/4 tsp. ginger (optional)
2/3 cup minced celery
6 Tbsp. chopped parsley

In a large bowl, pour the water over the matzos. While they soak, sautˇ chopped onion, celery and parsley in the fat. Drain matzos but do not mash. Add the sautˇed vegetables, well beaten eggs, ginger, salt and pepper. Toss lightly.
