This dish from the mountainous province of France is hearty fare.
1 clove garlic, crushed
2 Tbs. butter
4 1/2 cups potatoes, peeled and thinly sliced
3/4 cup grated cheese of your choice
salt and pepper
6 Tbs. butter, cut into very small dice
2/3 cup half-and-half
1. Rub the bottom and sides of a heavy baking dish with the crushed cloves of garlic. Grease the bottom and sides liberally with 2 TBS butter.
2. Spread half of the potato slices in the bottom half of the dish, sprinkle with salt and pepper, half the cheese and then dot with half of the butter. Top with remaining slices of potato, neatly arranged. Repeat with salt, pepper, butter and cheese.
3. Pour the cream down the inside of the dish, around the potatoes.
4. Cook in the top of a 400-degree pre-heated oven for 30-40 minutes, or until the potatoes are tender and the top nicely browned. Serve immediately. - John Hinde
