2 TBS butter
3 TBS flour
1- 2 tsp concentrated chicken stock
2 cups milk
1/4 cup mayonnaise
1 TBS Parmesan cheese
1 bunch fresh broccoli
3 cups cubed turkey
1/3 cup dry bread crumbs
2 tsp. melted butter or Vegetable oil spray, as needed
Preheat oven to 350 degrees F.
In a medium saucepan, melt 2 TBS butter. Stir in flour and 1 tsp concentrated stock. Gradually stir in milk. Taste and adjust with more concentrated stock if needed. Cook until mixture thickens and boils, stirring constantly.
Whisk in mayonnaise and Parmesan cheese. Stir until well blended. Set aside. Cut and blanch broccoli then place in a 12 x 8-inch baking dish. Arrange turkey on top. Pour sauce mixture over turkey.
In a small bowl, combine bread mixture with margarine, sprinkle on top. Bake uncovered until hot and lightly browned Ð approx 20 minutes.
