Raspberry Brie Tartlets Print Email

DuFour Puff pastry
Brie or Camembert cheese, not ripe and very cold
Tony's Organic Raspberry preserves
Pecans, roasted
Beaten egg or melted butter

Preheat oven to 425 degrees

Thaw and prepare puff pastry according to package directions. Cut into 2-inch squares. Place a flat 3/4 - 1 inch square of brie in the center of each pastry square, top with a dollop of raspberry preserves and then a pecan. Repeat with remaining pastry squares.

Moisten edges of pastry with water and fold corners to the center, pinching together to form a 'purse', take care to seal them well as they will expand and try to come apart in the oven. Brush pastry with beaten egg or butter.

Bake in the top of preheated oven, convection fan on if available, until puffed and brown, about 10 minutes - rotating pan once. - Chef Mick Rosacci, Tony's Market
