Tony's Prime Rib Rub Print Email


Great on Prime Rib or any beef roast.

1 TBS whole black peppercorns
1 tsp each: whole red, white and green peppercorns
2 tsp fresh rosemary, chopped
2 tsp fresh thyme
4 TBS coarse sea salt
1/2 tsp paprika
1/4 tsp cayenne (optional)

Combine seasonings in a flat-bottomed bowl and crush with the bottom of a glass until all the peppercorns are cracked. Rub over prime rib, reserving the remainder in an empty spice jar (donÕt worry, the salt will preserve the fresh herbs). For a garlicy kick, rub roast first with a puree of garlic and olive oil.
