Simple Sausage and Peppers Print Email


2 pounds Italian sausage (hot or mild)
2-3 TBS olive oil - separated
2-3 packs of Tony's Fajita Mix
-or-
2 sweet onions, cut into strips
4 bell peppers of assorted colors, seeded and cut into strips

1-3 cloves garlic
pinches of Tony’s Italian Herb Medley, or Tuscan Grill Rub, to taste
splash of red wine, Madeira or Marsala (optional)
1 jar Tony's Marinara Sauce (1.5 jars if you like it extra saucy)

In a large, heavy skillet over medium high heat, brown Italian sausages in 1 TBS olive oil, cooking to about 1/2 done – remove and reserve. Reduce heat to medium; add 1-2 more TBS olive oil along with the onions, pepper, garlic and Italian herb medley; sauté to brown lightly, about 5-8 minutes. *

Add back Italian sausage, splash with red wine and reduce until almost gone. Stir in Tony's Marinara and bring to a light simmer, cooking slowly and stirring regularly until the sauce and ingredients marry - about 10 minutes. Cover partially if evaporating too quickly.
