Sweet & Spicy Glazed Ribs Print Email


Falling-apart-tender ribs with a sweet & spicy BBQ glaze.

Pork Baby Back Ribs or Country Ribs (allow 3/4 - 1 LB per person)
Tony's BBQ Rub (Southern, KC Hickory or TX Mesquite)
Hot sauce or cayenne (optional, to taste)
Tony's Sweet Heat BBQ Sauce

Baby back rib slabs can be left whole or cut into 1-3 rib segments. Place ribs in a roasting pan, rib tips down and add water to about 3/4
inch deep.

Cover tightly and braise at 325 degrees to desired tenderness level, about 60-90 minutes (add more water if needed to keep pan from cooking dry). Can be done 1-2 days in advance and refrigerated until ready to serve.

Juices can be saved and defatted to enhance stock or soup.

Preheat a medium-heat indirect grill (300-350°).

If you like it extra spicy, sprinkle or brush ribs with hot sauce or cayenne. Sprinkle Tony’s BBQ Rub generously over ribs on all sides and rest at room temperature for at least 20 minutes as you prepare a medium-heat grill (300-350° - can also be finished in the oven at 375-400°)

Grill ribs to brown and sizzle well on all sides - stay attentive and rotate as needed to avoid burning! This can also be done in a hot oven. When ribs are browned and sizzling, brush with BBQ sauce and continue to grill/roast attentively until sizzling and glazed.

Remove from heat and serve immediately with more heated sauce.
