Buffalo Patties in Pan Salsa Print Email


12 oz ground buffalo
1/2 cup fresh bread crumbs
1 TBS fresh parsley, chopped
1 tsp. fresh thyme, chopped
1 tsp. fresh dill, chopped
1 tsp. Cajun spice
1 tsp. Tabasco sauce
Salt and fresh ground pepper to taste
1 TBS olive oil to cook patties

1/2 yellow pepper sliced
1 green jalapeno chopped fine
1/2 cup Spanish onion
1 cup mushrooms, sliced
4 roma tomatoes, chopped
1/2 cup dry white wine
Salt and fresh ground pepper to taste

In a glass bowl, combine all patty ingredients and mix thoroughly. Form into small sized patties approximately one ounce each. Heat a large non-stick skillet to medium high. Add the oil to the pan and saute the patties until lightly browned on both sides. Remove from pan and keep warm. Add the yellow pepper, jalapeno, onions and mushrooms, saute until soft. Add the chopped tomatoes and white wine and bring to a boil. Return the patties to the pan and continue to cook until the sauce reduces to the consistency of salsa. Correct the seasoning and serve
