Cajun Style Buffalo Chili Print Email

2.5 lbs. ground buffalo
1 lb buffalo sausage
1 large onion
2 Tbsp. vegetable oil
salt & pepper to taste
3 garlic cloves
2 TBS diced green chiles
8 oz. tomato sauce
1 bouillon cube
1 1/4 cup water
6 TBS chili powder
1 1/2 TBS chili powder
1 1/2 TBS ground cumin
3 TBS Cajun spice
1/8 TBS dry mustard
1/8 TBS brown sugar
pinch of oregano

In a large kettle brown the ground buffalo and sausage with chopped onion oil. Add salt and pepper to taste. Add remaining ingredients. Stir well, cover and simmer 3-4 hours until chili is thick and bubbly. Stir occasionally.

*Feel free to add in your favorite kind of beans (pinto, kidney, garbanzo). Follow soaking and cooking directions on bag. Add in while simmering chili.
