|Green Chili Bison Burger

Ground bison patties
Tony’s Southwestern Seasoning
Cheddar, Havarti or Gouda cheese
Fresh bakery buns or rolls
Fire-Roasted green chiles
Lettuce, tomato, guacamole (or avocado)
Brush patties lightly with olive oil and sprinkle with Tony’s seasoning to taste, or sprinkle with sea salt, fresh cracked pepper and garlic.
Grill burgers over medium coals to 155 degrees internal, top with slices of cheese and remove from grill to rest on a paper towel for 5 minutes. Split and toast buns / rolls (insides brushed with Tony’s Garlic Butter if you like) over hot coals.
Skin, stem, split, and seed chiles, or use frozen roast chiles. Serve burgers on toasted buns topped with green chiles, lettuce, tomato and guacamole (or avocado). – Chef Mick Rosacci, Tony’s Meats & Specialty Foods
