Quiche Lorraine Print Email

Preheat oven to 325 degrees.

Cook 8 slices of bacon, remove, chop and reserve. Drain all but 1-2 tablespoons of the drippings. Add 1/2 to 1 chopped onion, and cook until tender. Stir together 4 beaten eggs, 1 cup half & half, 1 cup milk, 1 tablespoon all purpose flour, 1/2 tsp. salt and dash of ground nutmeg. Stir in crumbled bacon, onion and 1 1/2 cups shredded or cubed Swiss cheese; mix well. Pour into a prepared pie crust and bake in a 325 degree oven for 45 to 50 minutes or until knife inserted in center comes out clean. Let rest 10 minutes before serving. Serves 6.
