Season filets with lemon seasoning. Top filets with tomatoes and Swiss. Roll into a spiral and pin with a toothpick. Top with sliced mushrooms and a pat of butter. Roast or grill in a casserole dish over indirect med-high coals or bake at 425¡ approximately 10 minutes per inch of thickness to 140-150 internal.
