Quick Beef Barbecue Sandwiches Print Email

1 lb. beef chip steaks
2 tsp. vegetable oil
1 medium onion, cut into thin wedges
3/4 cup prepared barbecue sauce
4 crusty rolls, split

Have your butcher slice a round or loin roast on his electric slicer like lunchmeat. Stack chip steaks; cut lengthwise in half and then crosswise into 1-inch wide strips. Set aside.

In large nonstick skillet, heat oil over medium-high heat until hot. Add onion; cook and stir 3-5 minutes or until lightly browned. Remove from skillet; keep warm. Raise heat to high.

Add half of the beef to the hot skillet and quickly stir-fry 1 minute or just until outside surface is no longer pink - do not overcook! Add onion and BBQ sauce and heat through, stirring occasionally. Serves four on fresh rolls.
