Southwestern Steak Rub Print Email

1/2 tsp. ground cumin
2 Tbsp. peppercorn medley
2 cloves fresh garlic, sliced
2 tsp. orange zest, minced
1/2 to 1 whole chipotle (fresh or dried - smoked jalape–o)
1 tsp. sea salt
1/2 tsp. oregano
olive oil
minced cilantro to top

Grind first 7 seasonings in a mortar and pestle adding oil to bind into a paste. Rub into steak and grill to medium rare.

*Serve with Colorado Salsa recipe, adding 1-2 tsp. honey and puree coarsely in food processor.
