Macadamia Crusted Ono Print Email

4 ono fillets, 6 oz each
1/8 cup olive oil
1 tsp. grated ginger,
1 tsp. grated garlic
salt and pepper to taste
1/4 cup Panko (Japanese Bread Crumbs)
1/4 cup butter
1/4 cup macadamia nuts, chopped
1/2 tsp. fresh basil, minced
1/2 tsp. fresh dill, minced
1/2 tsp. fresh thyme, minced
1/2 tsp. paprika

Marinate the ono for one hour in the olive oil, ginger, garlic, salt and pepper. Preheat oven to 375¡. Combine the Panko, butter, macadamia nuts, herbs, and paprika; blend well. Press marinated fish into Panko mixture, and bake for 8 to 10 minutes. Sam Choy, The Choy of Seafood.
