Jamaican Jerked Beef Steaks Print Email

4 aged Rib Eye, T Bone or NY Strip steaks
3-4 TBS Busha Browne's Jamaican Jerk Seasoning
8-12 pineapple rings, preferably fresh
1/4 cup minced green onion

Rub steaks with Jamaican Jerk Seasoning - the more you use the hotter they will be! Rest at cool room temperature for 60 minutes - or better yet, marinate 1-2 days in the refrigerator (recommended, this will cure the meat for an amazing flavor!)

Grill the steaks over medium heat to medium rare - tent with foil and rest for 5-10 minutes. When you remove the steaks from the grill, turn the heat to high and immediately add pineapple - browning quickly on both sides.

Slice steaks and serve on top of grilled pineapple rings, sprinkle with minced green onion and serve immediately. Serves 4-8 people. - Chef Mick Rosacci
