|Grilled Colorado Salsa
1 small sweet onion, sliced
2 ripe tomatoes, sliced
2 Tbsp. Roasted Garlic olive oil
1 Tbsp. Sweet Balsamico
sea salt and freshly ground pepper
2 tsp. fresh oregano
Brush onion and tomato with oil and sprinkle with salt and pepper. Grill onions over medium high heat until soft and brown, (some charred pieces are fine). Carefully grill tomatoes just a few minutes to mark. Remove both to a cutting board and chop. Combine with remaining ingredients and serve over steak at room temperature.
* Variation: Transfer warm salsa to food processor adding 1-2 tsp. of honey and puree to a sauce. Spoon sauce onto plate, place steak on top and top with another spoon-full of sauce.
