Sesame Ginger Halibut Print Email

Four 6-8 ounce halibut fillets
1-2 tsp grated ginger
Salt & white pepper
1 Egg white, slightly beaten
1/3 cup sesame seeds
1 TBS. butter

Rub fillets with ginger and season with salt and pepper to taste. Brush meat side with egg white. Gently press meaty side of fillets into sesame seeds to coat.

Melt butter in large nonstick skillet over low heat. Place fillets sesame side down in pan, and cook to golden brown, about 3 minutes. Turn each fillet skin side down, cover, and cook until fish flakes but is still slightly rare in the center, 4 to 5 minutes. Cooking time varies with thickness. Do not overcook!

If a sauce is desired, squeeze 1/2 lemon into cooking pan along with a pinch of grated ginger, a dash of soy and a splash of white wine. Reduce slightly and stir in pats of butter to thicken, pour over fillets and garnish with parsley or simply serve with lemon or teriyaki.
