Hawaiian Steamed Fish Print Email

1 whole fresh onaga or opakapaka (or red snapper)
-cleaned and scaled
1 cup fresh shiitake, sliced
1/2 cup pickled ginger, very thin slices
1/2 cup green onion, thinly sliced
1/2 cup cilantro, chopped
3/4 cup peanut oil
1 TBS Shoyu or soy sauce
salt and pepper to taste

On a platter, score the fish diagonally in two directions to make diamonds. Season with salt and pepper. Sprinkle mushrooms around the platter and put platter in steamer, cooking for 15 minutes or until done.

Remove fish platter, sprinkle fish with ginger and onion. Heat peanut oil until smoking, then pour over ginger and green onions, it should sizzle nicely. Pour shoyu over fish and drizzle with sesame oil and garnish with toasted sesame seeds and cilantro. -Sam Choy
