The Copper Kings Are Here!

The season is short for this exceptional salmon - and Tony's buys direct from a very hard working fisherman working the Copper River Delta - shipping us fresh Copper River Salmon as little as 24 hours from the water.

Meet Dennis, our fisherman friend in Alaska. Dennis is our direct source for Copper River King Salmon (akaChinook), as well as Sockeye Salmon and the best smoked salmon you ever tasted.

What makes the King Salmon of the Copper River so special?  It's their extended spawning run! These magnificent fishes have to negotiate 300 miles of icy glacial waters and hundreds of rapids in one of the world's most pristine river systems. In her wisdom, Mother Nature has prepared them with a particularly rich food supply, allowing them to enter the river bright, strong and fat.

Alaskan fishing regulations strictly limit the annual harvest to assure for the future generations of fish and fishermen. Mature fish are harvested only after their feeding cycle has ended and adequate escapement is assured. Fishermen chase and catch the fish from small boats normally operated by a single man or woman. Alaskan fishers are some of the last of the hunter-gatherer types to be found, and are very protective of their resources and way of life.

Salmon is rich with Omega-3 oils - the kind of fats that your cardiologist highly recommends. Salmon is high in HDL (good) cholesterol and beneficial Omega-3 fatty lipids, which simply stated, help carry the LDL (bad) cholesterol away from the artery walls while fortifying heart muscle cells against unstable heartbeats. Dietary omega-3s take effect quickly; showing up in cell membranes within days to weeks.
