Berkshire/Kurobuta Pork
This is a Heritage, or ancient breed of pork originated in Berkshire England and has long been respected as the finest breed of pork for eating. Its bloodline has been carefully protected for over 200 years to maintain the exceptional quality of flavor, tenderness and juiciness that has made the breed famous with chefs and gourmands.
Long kept by British royalty, live Berkshire hogs were gifted to the Japanese in 1800, where the line has also been kept pure. These hogs are black in color, and the Japanese call them Kurobuta, or ‘Black Hog’. |
Kurobuta and Berkshire Pork are the same thing. The Japanese have always been the world’s largest importer and user of this superior heritage breed, so the name Kurobuta has become very important in the industry. Berkshire or Kurobuta pigs are raised by small heritage farmers practicing natural farming methods, humane handling and a low stress lifestyle. The resulting pork cuts are particularly flavorful, tender, juicy and luscious – notably superior to other breeds. To gain certification, the breeding and raising of Berkshire or Kurobuta pork is closely regulated.
