What's For Holiday Supper?

Every year, our most popular holiday roast is the Beef Standing Rib Roast, closely followed by the Tenderloin Roast. I've secured a great selection of high-grade Standing Rib and Rib Eye Roasts (boneless) for your families holiday meal, as well as our 'fork-tender' Premium Tenderloin Roasts, no need to order!

Below you'll find details on our Classic Holiday Roasts, as well as our Signature Holiday Roasts. Most do not require pre-order, but some specialty items are in limited supply. See notes.

Premium Choice Standing Rib Roast
Our most popular Holiday Roast! All-natural, high-grade Premium Choice, aged for 21-28 days, and hand-cut in-house to Tony's specifications (just like a rib eye roast with only the rib bones attached - no lifter, no feather bones, no button bones, etc.). No orders are needed.

USDA Prime Grade Standing Rib Roast
We've only a limited supply of USDA Prime Grade Beef Ribs - or "True Prime Rib Roast. Particularly high in marbling, and with a full 21-28 days of aging, this is the most flavorful and luxurious Beef Rib Roast you can buy! Note: this roast may be too rich for some folks - recommended for Beef Conniosuers and those who grew up on a farm. We have only 37 available, and will sell out before Christmas. Order yours now - first come, first serve! Pre-order suggested.

Premium Choice Boneless Rib Eye Roast
All-natural and aged for 21-28 days, then hand-trimmed in-house to Tony's demanding specs. Allow 6-12 oz. pound per person. All the flavor of a Standing Rib, without the bones. No orders are needed.

Beef Tenderloin Roast
All-natural, Choice grade, aged tenderloins closely trimmed and then roll in a thin layer of basting fat. Also available, non-fatted tenderloins and center-cut Chateaubriand. No orders needed.

Boneless Leg of Lamb
High-grade, premium quality, all-natural, aged Spring lamb from Colorado’s Western Slope. Choose boneless half or whole legs to about 8 /LBS. Want a bone-in or semi-boneless roast? Just ask! No orders are needed.

Lamb Racks & Crowns
Premium quality aged rib racks (equivalent to a standing rib roast of beef). Choose a single rack, or let us expertly tie two or three racks into a festive Crown Roast. Please pre-order all Lamb Crown Roasts.

Boneless Lamb Strip Loin
The strip loin, or backstrap of lamb - equivalent to the New York Strip of beef. Great as medallions, butterflied steaks, or roasts. Please pre-order.

Premium Old World Hams
Choose from Honey Cured & Glazed Spiral Cut Hams, Boar's Head Brand Boneless Hams, or Tony's Mini Spiral Sliced Hams (a single muscle ham). No orders are needed.

American Bison (Buffalo) and Game Meats
Premium quality Rocky Mountain Bison cut by hand here at Tony's. Choose from Standing Rib Roast, New York Strip, Top Sirloin or Butcher's Heart, and tenderloin. Also available: Elk and Venison racks, backstraps, and chops; as well as Goose, Duckling, Pheasant & Quail. Special orders welcome. Please pre-order.

Standing Rib of Pork
A delicious cut from the rib end of the pork loin - we remove all the bothersome back bones, leaving just the juicy pork rib section along with the baby back ribs which can be French Cut at your request (no extra charge). A classic old world cut and juicier/more flavorful than a boneless pork roast. Please pre-order.

Pork Crown Roast
Lean, center cut pork loin expertly tied into a crown shape. Choose roasts by number of points (ribs) – 16, 18 & 20 point roasts available. Seasoned at no extra charge. Stuffing available. Please pre-order.

Tony's Butcher’s Heart Roast - a best buy!
A lean offering that’s as tender as a butcher’s heart! Center-cut boneless top sirloin (cap and gristle removed), each easy-to-carve roast serves 5-8. Serve with our Homemade Wild Mushroom, Bordelaise, or Sauce Au Poivre. Please pre-order, sometimes pre-cut and in the meat counter.

Napa Strip Loin Roast
This boneless shell strip roast (also known as NY strip) is elegant, tender, juicy and oh-so-easy to carve! Serve with our homemade Napa Wine Sauce. Roasts to 12 pounds. Pictured left. Please pre-order.

Boneless Lamb Strip Loin
The strip loin, or backstrap of lamb - equivalent to the New York Strip of beef. Great as medallions, butterflied steaks, or roasts. Please pre-order.

Boneless Rolled Lamb Saddle Roast
The ultimate lamb roast! We remove all the bones and excess fat from a whole Lamb Loin Saddle, (equivalent to boneless beef NY strips and tenderloins), and then roll it back together stuffed with Fresh Feta Cheese, Red Roasted Peppers, Spinach, Sea Salt, Black Pepper, Fresh Garlic and Olive Oil. 4-5 pound average weight. Garlic Herb Rolled Lamb Leg
Choose bone in, boneless, butterflied, rolled - your choice. Also available, boneless lamb strip loin and top round. Please pre-order.

Peach Stuffed Frenched Pork Rack
We start with the best part of a pork loin, French-cut the ribs, and then stuff with our homemade peach & sausage dressing. 7 pound average. Please pre-order!
