Tony's South of the Border Burger

4 Tony's South of the Border Burgers
1 onion
1 each red and green bell pepper
olive oil
Creole, Mexican or Taco Seasoning blend
Manchiva, Manchiva Enchilado or Chihuahua cheese
Tony's Green Chili
tomatoes, guacamole, sour cream, black olives

Preheat grill and thaw patties, if needed. Brush grill with oil and grill burgers, adding Mexican cheese to the second side and closing lid so it will melt.

Meanwhile, preheat a heavy skillet over medium high heat, or on grill. Add oil, peppers, onions and seasonings to taste - stir frying until peppers are soft. Set aside. Bring chili to simmer in a small pot. Preheat broiler.

Toast tortillas on grill lightly. Cut patties in half. Place two patties in a tortilla, add peppers and onions, fold in half and place on plate. Top with chili and more shredded Mexican cheese then place under broiler to toast. Serve with diced tomatoes, guacamole, sour cream and olives. - Chef Mick, Tony's
