NZ Prawn Scampi
1 lb. split freshwater prawns ¼ cup olive oil 2 cloves garlic, minced ¼ cup butter ½ teaspoon Cajun seasoning ½ tablespoon Worcestershire 1 tablespoon lemon juice ¼ cup green onion, chopped ¼ cup fresh parsley, chopped French bread, rice or pasta
Split prawns cleanly with a sharp chef’s knife and remove vein. Sauté garlic in olive oil over low heat. Add butter and remaining ingredients and bring to medium boil. Cook for 3-4 minutes. Add prawns and stir for 3-4 minutes or until done. Do not boil. Serve immediately with French bread for dipping in sauce. Also delicious over rice or pasta. |
