Beef - Burgers
Federal Blvd Burger
2 Hamburger patties Carne Asada Seasoning Two tortillas Minced onion (or grilled onion slices) Sharp, Natural Cheddar; grated 1 pint green (or red) chili Olives, lettuce, chopped tomato, guacamole
Season patties with Carne Asada seasoning (or your favorite) and grill to 155 degrees internal. Meanwhile, chop veggies, grate cheese and heat chili.
Lay a tortilla on each plate. Split burgers and arrange on one side of the tortilla, sprinkle with raw or grilled onions and cheddar. Fold tortilla in half on one side of each plate and top with chili and more cheese – place under a broiler to brown (if you can wait).
Make a guacamole salad on the other side of your plate by piling on plenty of shredded lettuce and topping it with a dollop of guacamole – garnish with chopped tomatoes and olives (as desired) and serve immediately. – Chef Mick Rosacci, Tony’s Meats & Specialty Foods |
