Italian Chicken Salad in Lettuce Cups
2 lbs cooked chicken or turkey, cubed 5 oz roasted red peppers diced 5 oz roasted yellow pepper diced 6 oz red onion, diced 2 oz Italian parsley, chopped 3 oz sliced and toasted almonds 2 oz capers, well rinsed 1 cup Tony's Italian Vinaigrette, Girards Champagne dressing, or your favorite 16 ea Bibb lettuce leaves 3 oz Asiago or Asiago Fresco cheese, cut into small cubes
Dice all ingredients and mix with dressing - serve in lettuce leaf cups. Makes a great appetizer, first course or side salad.
