Wild Florida Pink Shrimp Heaven
10 cups water 2 celery stalks, cut into 2-inch lengths 1 medium onion, cut into eighths 1 small lemon, quartered 1/2 bunch fresh parsley 8 black peppercorns 2 bay leaves 1 tablespoon salt 1/2 teaspoon ground red pepper
2 pounds Florida Key West Pink Shrimp Tony's Homemade Remoulade Tony's Homemade Cocktail Sauce Tony's Homemade Tartar Sauce
Combine first nine ingredients in a large saucepan, bring to a boil, reduce the heat, and simmer, uncovered, for 10 minutes. Strain the liquid and return it to the pan.
Add 2 pounds Florida Pink shrimp, preferably in their shells for best flavor. Return the liquid to a boil, reduce the heat, and simmer, uncovered, for 2 minutes exactly. Drain the shrimp, remove to a platter, and let cool.
Display on a platter with a cup of Tony's Cocktail, Remoulade, and Tartar Sauce. Yield: 8-12 appetizer servings - Adapted from Joy of Cooking --- |
