Beef - In the pan

Hot Roast Beef and Swiss Dijon Sandwich

Demi Baguettes or your favorite rustic bread
3-4 oz sliced rare roast beef
drizzle of olive oil
1-2 TBS prepared Demi Glace (optional)
1 – 2 oz Swiss cheese
Dijonnaise
lettuce and tomato (optional)

Preheat a 12-inch skillet over medium, to medium high heat. Split bread and place bread in oven to warm.

Scatter roast beef into a pile the same shape and size as the bread you are using. Drizzle or mist pan with olive oil and add roast beef, searing for one minute. Turn and drizzle with demi glace, if using, and top with a slice or two of Swiss cheese – cover and cook to melt cheese.

While meat warms, prepare buns with Dijonnaise, or Dijon mustard and mayonnaise. Line buns with lettuce, and then tomatoes, placing the meat in the center. Serve immediately with a cold beer. – Chef Michaelangelo (mick) Rosacci, www.TonysMarket.com -- www.TonyRosacciCatering.com
