Processing Fresh Pumpkin

Start with Sugar or Baking pumpkins for the best results.

Cut into quarters or manageable pieces and scoop out seeds and connective tissue with a large metal spoon. The seeds can be cleaned and roasted later.

Place the pieces of pumpkin skin side up on a roasting pan with 1 cup of water, cover loosely and roast until the pumpkin meat is very tender. When it’s cool enough to handle, scoop out the pumpkin meat with the same metal spoon.

Puree in a food processor or blender, making sure the stringy bits are gone. One pumpkin should give you about two cups of puree, which you use for pie, ravioli, risotto, or seasoned as a side dish.
