Seafood - In the Oven
Maple Teriyaki Salmon or Scallops
4 salmon filets 1/3 cup Vermont Maple Syrup 1/3 cup apple juice (or pineapple) 3 TBS soy sauce 3 TBS diced onion (fine) 1 clove garlic (minced) ½ tsp ginger
Combine all ingredients (except salmon) in a bowl and reserve about a third of the mixture for basting (refrigerate). Marinate the salmon filets in the refrigerator for 3 to 4 hours with remaining mixture, flipping once per hour to coat both sides.
Discard the marinade and broil the salmon for approx. 5 minutes … baste with the set aside marinade and continue broiling until fish flakes with a fork (approx. 10 minutes additional)
Maple Teriyaki Scallops Try this same recipe using 1 ½ lbs large sea scallops – after 5 minutes of broiling, flip the scallops, then baste and cook for 5 additional minutes (or until done). Vermont Organic Provision Company, LLC --- |
