Chinese Fried Rice
When well prepared, this dish is tough to beat. Not only aromatic and delicious, it is healthful, balanced and a use for leftovers. Use a large wok and a high flame.
1/2 pound ground pork or turkey 1/2 tsp. Tony's Chachere's Cajun seasoning 4 cups cooked white rice (pref. Jasmine) 4 eggs, 2 at a time, beaten 1 1/2-2 cups mixed veggies, chopped 2 TBS soy sauce 1/4 tsp. sugar canola oil, sesame oil, salt, white pepper
1. Add a splash of water to leftover rice, cover and warm in microwave slightly - just enough to take the chill off. Steam veggies in wok (or warm leftover veggies in microwave), set aside. Season ground pork with Cajun spice and sautŽ with 2 tsp. canola oil until just done, set aside. Scramble 2 eggs, set aside.
2. Heat a large wok to very hot, add 2 Tbsp. oil, when shimmering, add rice; chopping and stirring with wooden spoon until broken up and evenly covered with oil.
3. Add soy sauce and sugar, stir to blend. Beat two raw eggs and add to rice, stirring to coat evenly - cooking 1-2 minutes.
4. Add warm veggies, cooked meat, and stir in. Add scrambled eggs and stir in. Add aromatic sesame oil and a shake of white pepper. Stir in and serve hot.
* Note: This recipe can be made with leftover meats as well, chop finely and warm slightly before adding. Also delicious with chopped hot chilies added with the soy sauce. |
