Citrus Tri Tip
A grilled family steak with a sweet citrussy sauce.
1 Tri Tip Steak/Roast Tony's Lemon Pepper Seasoning or Sassy Lemon Seasoning* (recipe follows) Orange Sauce **
* Sassy Lemon Seasoning 4 tsp freshly ground pepper medley (black, green, white and pink peppercorns) 4 tsp dried lemon zest 2 tsp Kosher salt 1 tsp sugar 1/2 tsp granulated garlic 1/2 tsp granulated onion
** Orange Sauce 1/2 cup orange marmalade 1 thumb ginger, grated 2 TBS Balsamic vinegar 1/8 to 1/4 cup Thai Chilli Sauce (optional)
Season roast well with lemon seasoning blend and grill over indirect smoky coals to desired temperature (suggested 120-125 degrees internal) remove, cover and rest for 5-10 minutes and then slice thin across the grain.
While tri tip cooks, combine sauce ingredients and warm gently in a pan or microwave.
Spread a generous spoonful of the sauce on serving platter, transfer sliced roast to plate, drizzling with all the meat drippings. Spoon over remaining sauce to taste. |
