East West Roughy Katsu
Roll orange roughy fillets in flour seasoned with sea salt and white pepper. Dip in beaten egg, then dip in Japanese Panko bread crumbs. Rest in refrigerator until time to cook. Pan fry breaded fillets in 1/4-inch of very hot oil to a golden brown and serve over shredded lettuce, drizzling with heated East West Tropical Lemon, Tangy Mandarin, or Ginger Teriyaki Sauce. |
